This air fryer recipe is inspired by Bombay potatoes that are traditionally cooked in a pan or oven. They are crispy on the outside, soft in the middle, and full of tasty aromatic spices.
They’re quick to make and absolutely perfect as a side dish with curries, grilled meats, or even on their own with a spoonful of yoghurt or chutney.

This recipe uses simple spices and new potatoes. You can easily tweak the spice levels to suit your taste.

New Potatoes
New potatoes work great in the air fryer. They crisp up nicely, have a creamy centre and hold their shape well. Cut them into bite-sized chunks, around 2–3cm in size, to ensure they cook evenly.
If you don’t have new potatoes, Maris Piper, Charlotte, or baby potatoes are all great alternatives. Just make sure they’re cut to a similar size so they cook evenly. Floury potatoes like Maris Piper give an extra crisp outside, while waxier ones like Charlotte stay firmer.
Oil
You’ll need a couple of tablespoons of oil to coat the potatoes and help the spices stick. Sunflower, vegetable, or olive oil all work well.
Spices
The spice blend is what gives these potatoes their signature Bombay inspired flavour:
- Ground cumin
- Ground coriander
- Garam masala
- Turmeric
- Chilli powder
- Salt
Making Them
This is a really simple recipe — just mix, coat, and cook.

Step 1: Prep the Potatoes
Rinse the new potatoes well and cut them into even chunks, around 2–3cm each. There’s no need to peel them.
Step 2: Mix the Spices
In a large bowl, mix the oil with all the spices to form a thick, fragrant paste.
Step 3: Coat the Potatoes
Add the potato chunks to the bowl and toss them until they’re thoroughly coated in the spiced paste.
Step 4: Air Fry
Preheat your air fryer to 200°C (390°F). Place the potatoes in the basket in a single layer, depending on the size of your air fryer, you may need to cook them in batches for best results. Cook for 20 to 25 minutes, shaking the basket a few times during cooking to help them brown evenly.
Step 5: Check and Serve
Once the potatoes are golden and crispy on the outside and tender on the inside, they’re ready to serve. Test with a fork, they should slide in easily.
Serving Suggestions
Serve hot as a side with your favourite curry, grilled meat, or veggie main. They’re also great as a snack with mango chutney, mint yoghurt, or even a dollop of sour cream.

Ingredients
- 700 g new potatoes cut into bite-sized chunks (skin on)
- 2 tbsp oil sunflower, vegetable, or olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- ½ tsp turmeric
- ½ tsp chilli powder or to taste
- ½ tsp salt
Instructions
- Rinse the new potatoes and cut them into even chunks — about 2–3cm each.
