Slow Cooker Garlic Chicken

This slow cooker garlic chicken recipe combines tender boneless chicken thighs with a flavourful mix of garlic powder, fresh garlic cloves, onion powder, and mixed dried herbs. Butter adds richness, while lemon zest and juice bring a fresh zing. The dish is cooked in a chicken stock, with the option to thicken the sauce using chicken gravy granules or cornflour. Seasoned with just salt and pepper, it’s a simple yet delicious meal.

Follow these simple steps to create this slow cooker meal.

Step 1

Place the chicken thighs in the slow cooker.

Step 2

Mix the chicken stock with boiling water, lemon juice, and zest. Pour this over the chicken in the slow cooker.

Step 3

Sprinkle garlic powder, onion powder, and dried herbs over the chicken, followed by the crushed garlic and butter.

Cover and cook on high for 3-4 hours or low for 6-8 hours.

Step 5

Once cooked, transfer the chicken to a plate. Mix chicken gravy granules or a cornflour slurry* into the remaining liquid in the slow cooker to make a gravy.

* Mix 1 tablespoon cornflour with 1 ½ tablespoons water

Step 6

You can either return the chicken to the slow cooker and submerge it into the sauce, or, pour the sauce over the chicken when plated.

I had some roasted potatoes I had just cooked in the air fryer so I submerged them into the sauce alongside the chicken and served directly from the slow cooker bowl.

Alternatively you can plate up the chicken and sides, transfer the sauce to a jug or gravy boat and pour as much over your chicken as you wish.

Ingredients
  

  • 6-8 boneless chicken thighs skinless
  • 1 chicken stock pot/cube
  • 100 ml boiling water
  • Zest of half a lemon
  • Juice of one lemon
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried mixed herbs
  • 6 garlic cloves crushed
  • 50 g butter diced
  • 1 tbsp check of chicken gravy granules or 1 tbsp of cornflour.
  • Salt and pepper according to taste
